Bacon Wrapped Chicken Rollatini with Cheddar

In my book, bacon wrapped anything is delicious (and pretty darn fancy)!  And this chicken dish does not disappoint!

The prep time on this dish is ridiculously quick.  You basically just season the chicken, sprinkle on some cheese, roll it, and wrap it in bacon.  Then, just pop it in the oven and get something else done around the house (or fall asleep on the couch which may be what I did while I waited).

The fat from the bacon definitely kept the chicken breast moist and delicious.  After cooking the chicken completely, I turned the broiler on to crisp up the bacon (which was a great decision, by the way!).  And. as you cut into the chicken, the cheesy-goodness oozes out.  So yummy!

I used 1 pound of thinly sliced chicken breasts, and I have to say, it just fed the two of us.  When you roll the chicken, it becomes a tiny portion (I had 2 rolls myself), so keep that in mind if making this dish for more than 2 adults.

Start by preheating your oven to 350°…

  • Season 1 pound of thinly sliced chicken breasts (on one side) with some paprika, ground cayenne, garlic powder, and black pepper.

  • Flip the breasts over and sprinkle some shredded cheddar cheese onto each.

  • Roll up each chicken breast.

  • Rub the bottom of a baking dish with a few slices of bacon.
  • Wrap each rolled chicken breast with one slice (or two if you feel like you need a little extra bacon in your life!).

  • Place the chicken in the baking dish.

  • Bake for about 40 minutes, until the chicken is cooked through.

  • Turn the broiler onto high and cook for just a few minutes, until the bacon is crisp.

Remove from the oven and serve with a yummy veggie side dish (I went with spinach).  Enjoy!

Two Years Ago: Mexican Chicken Pizza

Bacon Wrapped Chicken Rollatini with Cheddar (serves 2)

 

INGREDIENTS:

  • 1 pound thinly sliced chicken breasts
  • ½ teaspoon paprika
  • ½ teaspoon ground cayenne pepper
  • ½ teaspoon garlic powder
  • ½ teaspoon ground black pepper
  • 10 tablespoons shredded cheddar cheese
  • 5 slices bacon

 

DIRECTIONS:

  • Preheat your oven to 350°.
  • Season the chicken breasts on one side with the paprika, cayenne, garlic powder, and black pepper.
  • Flip the chicken over and sprinkle the cheddar onto the other side.
  • Roll each chicken breast up.
  • Rub the bacon around the bottom of a baking dish.
  • Wrap a slice of bacon around each rolled chicken breast.
  • Place the chicken in the baking dish.
  • Bake for 40 minutes, until the chicken is cooked and golden brown.
  • Turn your broiler on high and broil the chicken for just a couple of minutes, until the bacon gets crisp.
