Beef with Broccoli in Orange Sauce

Made a stir fry tonight.  Actually, I started this dinner last night.  I marinated the beef overnight in the fridge.  You don’t have to marinate it for that long, but it definitely infuses the flavors of the marinade more.  I recommend it for sure.

This is based off a weightwatchers.com recipe.  It’s 5 PointsPlus per serving.  The “orange sauce” was really not much of a sauce.  Next time, I will use more liquid.  The orange flavor was very subtle, but I liked that.  It wasn’t overpowering at all.

Marinate the meat for anywhere from 30 minutes to 24 hours…

  • Thinly slice a pound of sirloin beef.  (Cut the beef as soon as you take it out of the fridge…the colder, the easier it is to slice.)

  • Place the beef in a large plastic resealable bag.

  • Chop 4 cloves of garlic and a 2 inch piece of garlic.

  • Thinly slice 2 scallions.

  • Add 2 tablespoons soy sauce and the garlic, ginger, and scallions to the bag.
  • Seal the bag and massage the beef with your hands to fully incorporate all of the ingredients.

  • Refrigerate until you want to cook the meal (again, anywhere from 30 minutes to 24 hours).

When you are ready to cook, prep everything first.  (Stir-fries are ready super fast, so you need everything chopped and ready to go before you start!)

  • Take the beef out of the fridge.

  • Make some rice.  (I used my rice cooker.  If you don’t have one, just cook store-bought rice according to the package directions.)

  • Slice 1 onion and cut up several small heads of broccoli.

  • Zest an orange into a cup.

  • Add the juice of the orange.

  • Heat 2 teaspoons vegetable oil in a skillet over high heat.

  • When the oil is hot, add the beef.

  • Stir-fry until the beef is browned, about 3-4 minutes.

  • Transfer the beef to a place using a slotted spoon.

  • Add the onion and broccoli.

  • Cook until the onions are brown and the broccoli is bright green.

  • Add some tamari.  (Use soy sauce if you don’t have tamari in the house.)

  • Add 1 teaspoon cornstarch to the orange juice and zest.

  • Stir until the cornstarch is dissolved.

  • Add the orange mixture to the skillet.

  • Add the beed back to the skillet.

  • Stir to combine all the ingredients and heat the beef back up.

Serve the beef over the rice.  (I drizzled a little soy sauce onto my rice before adding the beef and broccoli.  I recommend it because there was not much sauce.)  Enjoy!
