Chicken Cordon Bleu Burgers on Lettuce “Buns”

Okay, I’m done gloating.  I swear…

Let’s get to the matter at hand: Chicken Cordon Bleu Burgers.

I can’t say that I’ve ever actually had chicken cordon bleu in my lifetime.  I  do, however, chow down on some *fabulous* chicken cordon bleu appetizer bites every year at my annual secret santa party.  (No, I do not make them…I order them.  When you’re hosting almost 20 people around Christmas time, you need a little help!)

When I came across this recipe on foodnetwork.com, I immediately thought of those cordon bleu balls with their crispy outside and creamy, cheesy inside.  I definitely adapted it a bit, but was very satisfied.  Burgers are great because they are so quick to pull together.  And I cannot stress how much I am enjoying lettuce “buns” lately.  I don’t even miss the bread!

To make the burgers, start by preheating your grill or grill pan to medium-high…

  • Place 1 package of ground chicken in to the bottom of a bowl.

  • Finely chop up a shallot.

  • Add the shallot to the chicken.

  • Add some grill seasoning.

  • Sprinkle in some poultry seasoning.

  • Finish with a some paprika.

  • Mix well and divide the meat into 4 equal sections.

  • Roll each section into balls.

  • Press the balls into 4 patties and drizzle a little vegetable oil onto one side.

  • Place the patties onto your grill, oil-side down.

  • Cook for about 7 minutes, drizzle a little vegetable oil onto the tops, then flip.

  • Top each burger with 1 slice of baby Swiss cheese.  (I broke each slice in half so that it would fit the burgers better.)

  • Continue to cook until the burgers are done, about 6 more minutes.
  • While the burgers finish, slice up a plum tomato.

  • cut some iceberg lettuce into bun-sized wedges.

  • Cook some bacon in your microwave (or however you prefer to cook bacon) until crisp, about 4-5 minutes.

  • Break each piece of bacon in half.

To serve, start with a lettuce “bun” bottom…

Add the burger.

Top with some bacon.

Follow up with some tomato.

Finish with the lettuce “bun” top.

Chicken Cordon Bleu Burgers on Lettuce “Buns”(serves 4)

INGREDIENTS:

  • 1 package ground chicken
  • 1 shallot, minced
  • 2 teaspoons grill seasoning
  • 2 teaspoons poultry seasoning
  • 2 teaspoons paprika
  • vegetable oil
  • 4 slices bacon
  • 1 plum tomato, sliced
  • 4 slices baby swiss cheese
  • 1 head iceberg lettuce

 

DIRECTIONS:

  • Preheat your grill or grill pan to medium-high.
  • In a large bowl, combine the chicken, shallot, grill seasoning, poultry seasoning, and paprika.
  • Form the meat into 4 patties.
  • Drizzle some vegetable oil over one side of each patty.
  • Place the patties onto your grill, oil-side down.
  • Cook for about 7 minutes, drizzle a little more oil onto the tops, then flip.
  • Top each burger with 1 slice of baby swiss cheese.
  • Continue to cook until the burgers are done, about 6 more minutes.
