Side Dish Spinach

Sesame Soy Spinach

My mother-in-law recently sent us home with leftover kalbi (a Korean beef dish).  It was boneless (which, in my experience, is somewhat unusual for kalbi),and boy was it delicious!  I decided to make an Asian style spinach dish to go along with the tender and flavorful meat.  I pretty much just gathered some ingredients and threw them together.  It turned out pretty good though (if I do say so myself!).  It was super quick to make too.  In fact, it cooked faster than the beef did!

Start by heating a large skillet over medium-high heat…

  • Add a couple of tablespoons of vegetable oil.
  • Chop up a few cloves of garlic.

  • Once the oil is hot, add the garlic and some crushed red pepper flake.

  • Cook, stirring occasionally, until golden (about 2 minutes).
  • Add a bag of spinach.

  • Toss to coat the spinach in the oil.
  • Add a few splashes of rice wine vinegar.

  • Pour in a little soy sauce.

  • Stir and let cook until the spinach wilts, about 4 minutes.
  • Sprinkle in some sesame seeds.

  • Remove from the heat and add a little sesame oil.
  • Toss to combine.

Sesame Soy Spinach (serves 2)

INGREDIENTS:

  • 2 tablespoons vegetable oil
  • 4 cloves garlic, chopped
  • ½ teaspoon crushed red pepper flake
  • 1 bag spinach
  • 2 tablespoons rice wine vinegar
  • 2 tablespoons soy sauce
  • 2 tablespoons sesame seeds
  • 2 teaspoons sesame seed oil

DIRECTIONS:

  • Heat a large skillet over medium-high heat.
  • Add the vegetable oil and let it heat up.
  • Add the garlic and crushed red pepper flake.
  • Cook, stirring occasionally, until golden (about 2 minutes).
  • Add the spinach and toss.
  • Add the rice wine vinegar and soy sauce.
  • Stir and let cook until the spinach wilts, about 4 minutes.
  • Sprinkle in the sesame seeds.
  • Remove from the heat and add the sesame oil.
  • Toss to combine.
