Slow Cooker Pepper Steak

I was looking for a quick slow cooker recipe to make today (quick meaning 3 to 4 hours).  After searching through a great site of slow cooker recipes, I came across this one.  I haven’t had pepper steak in forever.  It’s a favorite meal of mine that my dad makes.  I changed the recipe up a bit and took some help from the store to save a little time (by getting already sliced beef).

This is definitely a keeper!  It was pretty quick to pull together, the meat was so tender, and the sauce was so delicious.

Start by browning the meat…

  • Slice about 1.5 pounds of beef round and season it with some garlic powder.  (If you’re looking to save time like I was today, buy the pre-sliced beef.)

  • Heat a couple of tablespoons of vegetable oil in a skillet over medium-high heat.

  • When the oil is hot, add the beef, seasoned side down.  (You will probably need to cook the beef in two batches.  Don’t overcrowd the pan!)

  • Season the other side of the meat with some more garlic powder.
  • When the meat is browned on one side, flip it and brown the other side.

  • Place the browned beef into your slow cooker.

  • Pour 1/3 cup beef stock into a measuring cup.

  • Add 1 tablespoon of cornstarch.

  • Whisk to combine.

  • Pour the mixture over the meat.

  • Slice a red pepper, a green pepper, and an onion.

  • Add the veggies to the slow cooker.

  • Add 1 small can of stewed tomatoes.  (Don’t drain the can before adding.)

  • Add 1 teaspoon of sugar.

  • Sprinkle in 1 teaspoon of salt.

  • Pour in 3 tablespoons of soy sauce.

  • Stir well to combine everything.

  • Cover and cook on high for 4 hours (or low for 8).

When the meat is almost done, make some rice.  You could just use boil-in-a-bag.  That is considered unacceptable in my house though.  So, I used my rice cooker to make some brown rice.

To serve, pile some rice onto your plate.

Top with the pepper steak, spooning on some extra sauce.
