Cheesesteak Sloppy Joes

I love a good sloppy joe every now and then.  While my most favorite version is Rachael Ray’s “messy guisseppe”, this recipe is promising.  I think it needs a few tweaks, but has great potential.  And, it was really simple and fast to make (perfect for a week night!).  My real issue the meat mixture was a bit bland.  I think adding some more seasoning next time would be beneficial (definitely more s&p, maybe some red pepper flake for a little heat, and maybe some Worcestershire sauce).  I also think adding some velveeta cheese to the meat at the end and stirring to melt it would be a fantastic idea!

Start with the little amount of prep work you have….

  • Chop up 4 cloves of garlic, 1 green pepper, and 1 onion.  (And that’s all the prep folks!)
  • Heat a skillet over medium-high heat.
  • Add 1 package of ground beef.
  • Break up the meat with a wooden spoon.
  • Cook until browned, stirring every now and then.
  • Once the meat is browned, add the veggies.
  • Stir to combine and cook until tender (about 5 minutes).
  • Once the veggies are tender, add 1/3 cup of steak sauce.
  • Then, add 1 cup of beef stock.
  • Stir to combine, season with some s&p, and let simmer for a few more minutes, until some of the liquid is absorbed.
  • While the meat is simmering, preheat your broiler.  (If you have heat settings, I used low.)
  • Place two (or more depending on how many you are feeding) open rolls on a baking sheet.  (I used whole wheat.)
  • Remove some of the bread from the bottom to create a nice little hole for the meat.
  • Place a slice of provolone on the top side of the roll.
  • Place the rolls untder the broiler for just a minute or two.  (Keep your eye on them!  Nobody likes a burnt roll!)
  • When the rolls are toasted and the cheese is slightly melted, remove from the broiler and top with the meat mixture.

And that’s all she wrote.  I can’t emphasize how quick this meal is.  It is as equally messy though!  I just served a cucumber-tomato salad and some good old boxed macaroni and cheese (surprise, surprise) on the side.  (I did try the whole-wheat mac & cheese this time, and it was good.  Definitely switching to that for the future!)  Enjoy!
