Chicken Pesto Bake

I recently made my tomato, pesto, & mozzarella cups, so I had some pest leftover.  I didn’t want it to go bad, so I searched and found this recipe to try.  It was easy to make and had some great flavors going on.

Preheat your oven to 400°

  • Line a baking sheet with aluminum foil.
  • Place 1 package of thinly sliced chicken breasts on the baking sheet.
  • Season well with s&p.

  • Spread about 2 teaspoons of pesto onto each chicken breast.  (VERY IMPORTANT: Make sure you don’t touch the chicken with the spoon and then put it back into the pesto!  You will contaminate all of the leftover pesto!  Pour the pesto onto the chicken, then spread it out with a spoon.)

  • Place the chicken in the oven and bake until cooked through, about 15 minutes.
  • While the chicken bakes, thinly slice 2 plum tomatoes.

  • When the chicken is done, remove it from the oven.

  • Top with the sliced tomato.

  • Sprinkle some shredded mozzarella onto each piece.

  • Top with some shredded Parmesan.

  • Place back in the oven and cook until the cheese is melted, about 5 more minutes.

Chicken Pesto Bake (serves 6)

INGREDIENTS:

  • 1 package thinly sliced chicken breasts
  • salt
  • pepper
  • 10 teaspoons pesto
  • 2 plum tomatoes
  • 1 cup shredded mozzarella cheese
  • 5 tablespoons shredded Parmesan cheese

DIRECTIONS:

  • Preheat your oven to 400°.

  • Place the chicken on the baking sheet.
  • Season well with the salt and pepper.
  • Evenly spread the pesto onto the chicken.  (VERY IMPORTANT: Make sure you don’t touch the chicken with the spoon and then put it back into the pesto!  You will contaminate all of your leftover pesto!  Instead, pour the pesto onto the chicken, then spread it out with a spoon.)
  • Bake the chicken until cooked, about 15 minutes.
  • Thinly slice the tomatoes.
  • When the chicken is finished, remove from the oven.
  • Place the tomato onto each chicken breast.
  • Sprinkle the mozzarella onto each piece of chicken.
  • Top with the Parmesan.
  • Place bake in the oven until the cheese is melted, about 5 minutes.
