Spinach & Feta Crescent Rolls

I’m continuing with the appetizers from my brother-in-law’s little birthday get-together.  This was the easiest and quickest to make.  We all really liked them (even my *very picky* sister!).  The crescent dough is filled with a mixture of spinach, feta, mozzarella, and red pepper flakes (my *very picky* sister would have preferred the last ingredient to be omitted).  When they bake, the crescents become golden and flaky while the mozzarella and feta melts into cheesy goodness.

My inspiration was found via Pinterest.  (Seriously, if you are not on Pinterest yet, you are missing out!)  The best part of this recipe is that it’s actually more of a method.  You could totally switch the filling up and make your own tasty creations.

For this version, preheat the oven to 350º and start with the filling…

  • I tore up about 1/3 of a bag of baby spinach into small pieces.
  • Add some crumbled feta.  (I just added what looked like a good amount…maybe about 1/3 cup?)
  • Add about the same amount of shredded mozzarella.
  • Sprinkle in 1/4 teaspoon red pepper flake.
  • Season with some black pepper.
  • Mix everything up with your fingers.
  • Open up a can of crescent rolls and separate the 8 triangles.
  • Place some of the filling on the thickest part of each triangle.
  • Roll the crescent and place onto a baking sheet.
  • Place in the oven and bake until puffy and golden, about 15 minutes.

Serve immediately while the crescents are still warm.  Mmmmmm.  Enjoy!
