🌿🍅 Last night’s dinner was a homemade delight! I whipped up some cavatappi with a burst of flavors from fresh tomatoes and spinach. 🍝

First, I sautéed some garlic and red pepper flakes in a little oil. Then I added colorful cherry tomatoes and let them cook until they started to burst. 🌈🍅 Next, I tossed in a bag of spinach and cooked it until it wilted perfectly. 🥬

The final touch was adding the cooked cavatappi, a splash of pasta water, and some shredded Parmesan cheese. 🌿🧀 I finished it off with fresh basil from my garden to bring everything together. The result? Absolutely delicious! 😋✨

I made this Beef and Bean Soup with Kale in my @instantpotofficial for the first time in January 2022. And I have absolutely no idea why I waited so long to make it again!! It really is super easy to pull together (even on a weeknight) and is so hearty and flavorful! It starts like most soups…with onion, celery, carrot, and garlic. But it is totally transformed by the ground beef, pasta, kale, and beans. A perfect winter comfort meal! It was so good, I almost didn’t remember to take a photo of the final product! 😂🤦🏻‍♀️

* Set your Instant Pot to sauté mode.
* Add 2 tablespoons EVOO.
* Chop and add 1 red onion, 3 cloves of garlic, 1 carrot and 1 rib of celery.
* Add 1 pound ground beef.
* Season with salt and pepper.
* Break up the beef with a wooden spoon.
* Cook until the beef is browned, about 6-8 minutes.
* Add one large can of crushed tomatoes, 4 cups beef broth, 1 bay leaf, 1/2 a teaspoon of dried oregano, 1/2 a teaspoon of dried basil, and 1/4 of a teaspoon dried thyme.
* Stir, seal, and cook on high pressure for 15 minutes.
* Quick release, open the pot, and add about 1 cup kale, half a box of penne, and 1 can red kidney beans. (Do not drain or rinse the beans.)
* Stir and close the lid.
* Cook on high pressure for 4 minutes.
* Quick release and remove the bay leaf before serving.

Korean Beef Bowls from @skinnytaste was dinner tonight! I feel like I have been in a dinner rut lately, making the same few meals on repeat. Our schedule has been super busy, so easy meals that my girls also love have been my go-to. But, I was very happy to change it up tonight! We have had this meal before, but not in a long time so it felt new. It’s super quick to pull together and also very easy to deconstruct for kids!

P.S. - I highly recommend getting microwaveable rice that comes in bowls. The consistency is just like my rice cooker. Such a time saver (and no clean up)! I get ours at @hmart or @costco !

There’s nothing like a good sheet pan meal to help your empty out your fridge! It’s quick, simple, and uses minimal dishes! Tonight, I used a combination of bell and hot peppers from my garden, one tiny eggplant (also from my garden), red onion, garlic, potatoes, and sweet Italian sausage. All you have to do is chop everything up, mix with some olive oil and seasonings, throw into a baking sheet, and cook in the over until done. (I did 400 degrees for 40 minutes.) So easy and delicious!
