Crispy Garlic Parmesan Chicken

This chicken is really quick to make and is a welcome change from the rather mundane breaded chicken cutlet.  The added flavor from the garlic and cheese and the crunch from the panko breadcrumbs adds a whole new dimension to an easy weeknight meal!  All you have to do is bread the chicken, pop it in the oven, and wait for it to cook itself.  Perfect!

Start by preheating your oven to 350°…

  • Coat a 9” by 13” baking dish with the cooking spray.

  • Chop up several cloves of garlic.

  • Pour a few tablespoons of EVOO into a bowl.

  • Combine the garlic with the olive oil in a bowl.

  • Pour some whole wheat breadcrumbs onto a shallow plate.

  • Add a good heaping of grated Parmesan cheese.

  • Season with some black pepper.

  • Last, add dried basil.

  • Mix well to combine everything.

  • Dip each chicken breast into the garlic-infused oil.  (Make sure you dip both sides!)

  • Press the chicken into the breadcrumb mixture, completely coating both sides.

(Aren’t those chocolates in the background so tempting?!)

  • Place the chicken into the baking dish.

  • Pour some of the extra breadcrumb mixture on top.

  • Bake for 35 minutes or until golden brown and cooked completely.

Crispy Garlic Parmesan Chicken (serves 4)

 

INGREDIENTS:

  • nonstick cooking spray
  • 2 cloves garlic, minced
  • 2 tablespoons extra virgin olive oil
  • 1 cup whole wheat breadcrumbs
  • ⅔ cup grated Parmesan cheese
  • ¼ teaspoon black pepper
  • 1 teaspoon dried basil
  • 1 pound thin chicken breasts

DIRECTIONS:

  • Preheat your oven to 350°.
  • Coat a baking dish with the cooking spray.
  • Combine the garlic and the olive oil in a bowl.
  • Combine the breadcrumbs, Parmesan, pepper, and basil on a dish.
  • Dip each chicken breast into the oil, coating both sides.
  • Press the chicken into the breadcrumb mixture, completely coating both sides.
  • Place the chicken in the baking dish.
  • Sprinkle some of the extra breadcrumb mixture on top.
  • Bake for 35 minutes, until cooked through.
