For the Chicken Parmesan Rollatini with Ricotta & Spinach, what would you suggest to be a suitable replacement for spinach? It’s looks heavenly but I’m allergic to spinach /:

You could definitely use a lot of fresh basil in place of the spinach.  Or saute any green (like kale or escarole) and add that.  I hope you like it!  Let me know what you use!  🙂
