Garlicky Broccoli Rabe

I *love* broccoli rabe.  It’s a vegetable I only started eating a few years ago, but boy am I making up for lost time!  I order it whenever I have the chance…as a side dish or as a part of my main dish.  It’s great with sausage or shrimp.  It has quickly become one of my favorites.  It’s just so yummy!

I decided that it was finally time for me to tackle this green in my own kitchen.  (I actually made it once before when I was staying at my sister’s house during Hurricane Sandy last year.  Blogging was the last thing on my mind during those two crazy weeks though!)  This time, I blanched the broccoli rabe first, then finished it in a pan with some EVOO, lots of garlic (don’t be shy!), and pepper (both black and red).  I think I blanched it for too long though.  It was a little on the mushy side.  (I also completely neglected to either run cold water over or place the blanched broccoli rabe into ice water to stop the cooking process.  A big mistake!)  Next time, I may skip the blanching altogether and see how it turns out.  (I’ll let you know!)

Start by bringing a pot of water to a boil (if you’re blanching first)…

  • Trim the ends off of 1 bunch of broccoli rabe.

  • Salt the boiling water.
  • Add the broccoli rabe.

  • Cook, stirring occasionally, for no more than 3 minutes.
  • Drain (and place in ice water!).

  • Heat some EVOO in a skillet over medium-high heat.

  • Mince up 4 cloves of garlic.

  • Add the garlic to the hot oil and cook until golden, about 30 seconds.

  • Add the broccoli rabe.

  • Stir to combine.

  • Season with ground black pepper and crushed red pepper flake, to taste.
  • Stir one last time and cook for another minute or two.

Sprinkle some Parmesan on top when serving if you’d like…

Garlicky Broccoli Rabe (serves 2-4)

 

INGREDIENTS:

  • 1 large bunch broccoli rabe
  • salt
  • 1 tablespoon extra virgin olive oil
  • 4 cloves garlic, minced
  • ¼ teaspoon crushed red pepper flake
  • ¼ teaspoon ground black pepper

 

DIRECTIONS:

  • Bring a pot of water to a boil.
  • Salt the water, then add the broccoli rabe.
  • Cook, stirring occasionally, for about 3 minutes.
  • Drain the broccoli rabe and place in a water bath.
  • Heat the olive oil over medium-high heat.
  • Add the garlic and cook until golden brown, about 30 seconds.
  • Add the broccoli rabe and stir.
  • Season with the red and black pepper.
  • Cook for a minute or two more.
