Grilled Cheese with Arugula and Roasted Peppers

Before I get to this delicious grilled cheese sandwich, I just need to (ahem) apologize for going MIA the last two weeks.  School started back up.  It really is an adjustment getting back into the swing of things.  I’ve come home every night the past two weeks with great intentions of cooking and cleaning and blogging.  But, I end up snuggled on my couch instead every single time!

The good news is I think I am finally readjusted to having an alarm clock and being on my feet all day long again, so I’m back!  And I’m returning with a twist on a classic lunch: my grilled cheese with arugula and roasted peppers.  Think of it as an Italian style grilled cheese.  The pepperiness from the arugula goes great with the sweet and slightly smoky peppers.  And the ooey-gooey cheesy goodness from the mozzarella will make this sandwich your go-to lunch of the future!

Start by assembling the sandwich…

  • Heat a small pan over medium heat.
  • Place a tablespoon of butter in the pan.

  • Lay out 2 pieces of bread.  (I normally use kaiser rolls.)
  • Put about a handful of arugula on top of each slice of bread.

  • Top both pieces with some shredded mozzarella cheese.  (Be generous!)

  • Finish each slice of bread with several strips of roasted peppers.

  • Carefully place one piece of bread on top of the other.  (There will be spillage.  Try to salvage as much as you can!)

  • Once the butter melts, place the sandwich in the pan.

  • Cook for about 5-7 minutes, until one side of the bread is golden brown.
  • Carefully remove the sandwich from the pan.
  • Add another tablespoon of butter and let it melt.

  • Place the sandwich back in the pan, uncooked side down.

  • Continue cooking until golden brown, about an additional 5 minutes.  (The cheese should also be melted by then.)

Serve immediately.

Ingredients
  • 2 tablespoons butter, divided
  • 2 slices whole wheat bread
  • ½ cup arugula, divided
  • ¼ cup shredded mozzarella, divided
  • 1 roasted pepper, cut into strips
Directions
  1. Heat a small pan over medium heat.
  2. Melt half of the butter in the pan.
  3. Top each slice of bread with half of the arugula, cheese, and roasted peppers.
  4. Carefully place 1 piece of bread on top of the other to form a sandwich.
  5. Place the sandwich in the skillet.
  6. Let cook for 5-7 minutes, until golden brown.
  7. Remove the sandwich from the pan.
  8. Melt the remaining tablespoon of butter.
  9. Place the sandwich back in the pan, uncooked side down.
  10. Cook until the cheese has melted and the bread is golden brown, about 5 more minutes.
  11. Cut in half and serve immediately.
