I have become obsessed with spiralizing zucchini this summer. That is for sure.
I also, however, still love zucchini in a variety of other ways. So this simple three ingredient zucchini side dish was right up my alley. (It was also a great way to use some of the huge container of lemon pepper that has been sitting in my pantry for a while now!)
You can use your grill or grill pan for this recipe. I used my Griddler (surprise, surprise!). It literally takes no time at all. Just cut up the zucchini, toss them in a bowl, then grill until they have beautiful grill marks and are tender crisp.
(Ignore the lemon in this picture. I thought I would squeeze a little lemon juice over the zucchini once I took them off the grill, but after tasting them I decided it wasn’t necessary. If you want even more lemony flavor, go for it!)
Start with the minimal prep…
- Preheat your grill to medium-high.
- Cut 2 zucchini into sticks.
- Place the zucchini in a large bowl.
- Sprinkle on some lemon pepper.
- Drizzle in a little EVOO.
- Toss until all of the zucchini sticks are coated.
- Place the zucchini cut-side down on your grill.
- Let grill until grill marks appear, about 2-3 minutes.
- Flip the zucchini (to the other cut-side).
- Continue cooking until the zucchini are tender crisp, about 2-3 more minutes.
Serve alongside a juicy burger or steak. Enjoy!

- 2 zucchini, cut into sticks
- 2 tablespoons lemon pepper
- 1 tablespoon extra virgin olive oil
- Preheat your grill to medium-high.
- Place the zucchini sticks in a large bowl.
- Add the lemon pepper and olive oil.
- Toss until all of the zucchini sticks are coated in the lemon pepper.
- Place the zucchini cut-side down on your grill.
- Let cook until grill marks form, about 2-3 minutes.
- Flip and continue cooking until tender crisp, about 2-3 more minutes.
