Greek Green Beans

I’ve most certainly been on a green bean kick lately.  It’s been my go to veggie for the past month.  While my adaptation of this recipe requires a little more work than the last two (Lemon Roasted and Parmesan Roasted), the flavors are equally delicious.  I especially liked the combination of feta and tomatoes with the beans.  The dish had great color too.  It paired perfectly with my Greek Turkey Burgers.

Start by bringing a small pot of water to a boil…

  • Add a 12 ounce bag of green beans and cook for 5 minutes, stirring occasionally.

  • Drain the beans and run under cold water to stop the cooking process.  Set aside.

  • Slice ½ an onion and mince up a couple of cloves of garlic.

  • Heat some EVOO in a skillet over medium-high heat.

  • Add the onion and sauté until tender, about 5 minutes.

  • Add the garlic and stir.

  • Cook for 1 minute, then add a small can of diced tomatoes.
  • Season with just a little sugar and some s&p.

  • Stir to combine.

  • Add the green beans to the tomato mixture.

  • Stir again and let simmer, uncovered, for about 10 minutes.

  • After 10 minutes, increase the heat to reduce the sauce.

  • Squeeze in the juice from ½ a lemon.

  • Remove from the heat.

  • Sprinkle a little feta on top.

Greek Green Beans (serves 4)

INGREDIENTS:

  • 1 bag green beans (12 oz.)
  • 1½ tablespoons extra virgin olive oil
  • ½ onion, sliced
  • 2 cloves garlic, minced
  • 1 small can diced tomatoes
  • ¼ teaspoon sugar
  • ¼ teaspoon salt
  • ¼ teaspoon ground black pepper
  • juice from ½ lemon
  • ¼ cup crumbled feta with Mediterranean herbs

DIRECTIONS:

  • Add the green beans and cook for 5 minutes, stirring occasionally.

  • Heat the olive oil in a skillet over medium-high heat.
  • Add the onion and sauté until tender, about 5 minutes.
  • Add the garlic and stir.
  • Cook for 1 minute, then add the tomatoes, sugar, salt, and pepper.
  • Stir to combine and add the green beans.
  • Stir again and let simmer for about 10 minutes.
  • After 10 minutes, increase the heat to reduce the sauce.
  • Squeeze in the lemon juice.
  • Remove from the heat and add the feta.
