Bacon & Cheese Omelet

Just a quick breakfast post today…made yummy bacon & cheese omelets.  I cooked the bacon in the pan first then placed on a paper towel lined plate to absorb the grease.  I beat two eggs with a splash of skim milk, pepper, and a little bit of tabasco.  I cooked the omelets in the bacon grease, which gives great flavor.  The filling was a mix of colby and cheddar cheese and crumpled bacon.  Yummy!

I am getting much better at folding the omelets the “French” way.  I used to just fold them in half.  I’ve got folding into thirds down to a science now!
