Penne with Vodka Sauce

Basketball playoffs interrupted my normal cooking this week again.  My girls made it all the way to the championship game though, so I have no complaints.  Unfortunately, we didn’t win, but I love my girls and can’t wait for next season!

Got back into my kitchen tonight with an old favorite – Lidia’s Penne alla Vodka.  I know this recipe by heart.  Crack and peel 10 cloves of garlic, then saute in EVOO.  Add diced tomatoes, bring to a boil.  Add salt and red pepper flakes.  Simmer for 2 minutes.  Add the vodka.  Simmer for about 10 minutes.  Fish out the garlic, add the cream and a little EVOO.  Add the pasta and some cheese.  Yummy.

I love this vodka sauce recipe because it is not super heavy and creamy.  I used whole wheat penne and light cream.  Matt bought delicious roasted garlic ciabatta bread from Stop & Shop (they really do have a great bakery).

Hoping to bring out the good old slow cooker on Monday.  Stayed tuned!
